I totally dropped the ball on prepping you this year for St. Patrick's Day in the recipe department.  Here it is, St. Paddys Day and I'm finallygiving a a Slow Cooker Corned Beef recipe.

Oh the shame.   Bad blogger!Baaaaadblogger.

But, have you ever been so crazy busy that you can hardly keep up?

Now, you know what kind of week it's been!

And believe it or not, in all the craziness, my slow cooker has been working overtime.

You all knowhow fast, easy and convenient slow cooker cooking can be…, so one would think that I've hadplenty of time to do other stuff, like get my blog posts done on time.  ðŸ™‚  But, as we all know, not everything goes as one planned.

So today's post is late and I'm bringing you a St. Patricks Day classic just in time.Barelyin time.

But, the good news is – if you have a Corned Beef roast at the ready for the big day, and a big stout beer, you're 6 hours from slow cooker yummy goodness!

You can use any stout beer that you want.  In the past, I've primarily used Guinness, but this time I used Troll Porter from Hale's Ales Brewery here in Seattle.

What I will tell you is – the one thing that never disappoints is how incredibly moist and tender the corned beef is!

Slow Cooker Corned Beef with Stout Beer | Inspiration KitchenNow, here's one thing I do want to share{please read the warning}, I also threw an onion, garlic and a head of cabbage in the crock pot withthe Corned Beef.  Personally, I don't recommend adding the cabbage , because the beer imparts a unique flavor to it.  It wasn't abadflavor, but it wasn't great either – and I only like to bring you totally awesome recipes.

The Corned Beef however turned out beautifully!  The meat was fork-tender and had a great slightly sweet flavor that was moist with every bite!

Slow Cooker Corned Beef with Stout Beer | Inspiration KitchenWhen I do this recipe again, I'll will saute the cabbage in a separate pan – because we *love* the taste of cabbage.  And, I don't want that cabbage flavor to be masked by beer – no matter how good the brew is!

Slow Cooker Corned Beef

This Slow Cooker Corned Beef with Stout Beer is cooked over slow heat for 6+ hours to bring you the juiciest, most flavorful corned beef your family will love!

  • 2 and 1/2 pounds corned beef brisket with seasoning
  • 1 pint Porter Ale beer
  • 1 large onion coarsely chopped
  • 5 cloves garlic coarsely chopped
  • 1 teaspoon black peppercorns
  • 3 bay leaves
  • Place corned beef brisket into a slow cooker and cover with 1 pint Porter Ale beer. Add onion, garlic cloves, black peppercorns and bay leaves. Turn crock pot on high and cook on high for 4 hours. Turn crock pot down to low setting and cook an additional 2 hours.

  • Remove from slow cooker, remove bay leaves and serve.
